Conchas
The pastry most people picture when they think of pan dulce. A slow-risen enriched dough, baked soft, finished with a hand-scored sugar topping that cracks into a shell as it bakes. Best the day they're made, which is the day you get them.

Bizcochos
Short, crumbling, and gone in two bites. A butter shortbread baked pale, then pressed into cinnamon sugar while still warm so it sets into a crust as it cools.

Pan de Muerto
Baked for Día de los Muertos and no other time of year. An enriched bread scented with orange blossom and anise, shaped with the bones across the top, finished in butter and sugar. Ordered for an ofrenda as often as for a table.
